Home made Granola

There are just not enough words to describe the smells that fill up the house while making this Granola recipe. And the most fun part about it, is that the smells stick nicely to the cloths and the whole day you walk around with beautiful fresh homemade Granola smell in your nose.

This recipe is not really complicated and actually quite basic. Of course you can add every time something else like Goji barriers  or some other dry fruits, you can exchange the date syrup with agave syrup, you can use add kind of flakes like rice flakes or even soy flakes and you can add some interesting spices like cardamom. But actually, also in its basic form, this recipe is quite amazing.

Oatmeal has many benefits. The fiber in oatmeal (16.5g in a cup) help to lower the "bad cholesterol" levels (LDL), improve digestion and leave you full for a long period of time. Other than that, oatmeal is rich with all kinds of minerals like magnesium and zinc, and is also rich with vitamins like B1 and E.
So all in all, starting the day with a yummy and fragrance Granola breakfast is a good way for a successful energized day!

The ingredients :

  • 1\2 Kg rolled oatmeal
  • 1 spoon of cinnamon
  • 3 spoons of coconut oil
  • 3\4 cup of date syrup (pure without sugar of course!)
  • Handful of sunflower seeds
  • Handful of pumpkin seeds
  • Handful of flaxseeds
  • Handful of your favorite nuts (chopped)

In a big bowl mix the rolled oats with the cinnamon, sunflower seeds, pumpkin seeds and the flaxseeds. It's better to mix with your hands and it's also much more fun. Melt the coconut oil in a pan and add it to the mixture together with date syrup. Mix again with your hands. of course, this stage is a perfect opportunity to taste a bit from the mixture, without anyone looking. After the mixture is ready, spread it evenly on a tray with baking paper and bake for 40 minutes in 170 degrees. It's very important to take the Granola out every 10 minutes and mix it can bake from all sides and it will not burn and get an unwanted bitter taste. After 40 minutes take it out and set it aside to cool down. This is also a good stage to taste a bit, but be careful, it's hot. When the granola is cool enough, add the nut mixture, mix a bit and put in a box. The best actually, is to put the granola in a glass jar, but you don't have to. There are some who will put it even in the freezer, but from my experience, the granola is so yummy that it doesn’t survive long enough to get bad. Some soy yoghurt or some almond milk and it disappear like it was never there. One small tip my wife gave me : it's better, although it's really hard to do, to leave the granola to rest a bit in the yoghurt and let the tastes spread a bit. That way you get a nice caramelized interesting flavor, but I cannot wait long enough… Enjoy!
