Vegan Banana Ice-cream with mixed Berries and Chocolate Chunks

So also here in Germany it's getting warmer, and you can already sit outside and enjoy the sun (because it's still cold in the shade) with a nice bowl of yummy ice-cream to chill the body (but not too much, because it's not still that hot). The sun is warming the face, the wind is blowing through the hair, the tomato plants are blooming, and the mouth is sweet from yummy good ice-cream. Amazing!

No need for a special ice-cream maker machine for this recipe, just a good mixer and a bit planning ahead. That means, cutting the bananas and freezing them for a few hours.

The Ingredients :


3 frozen chopped bananas
Handful of frozen mixed berries
A variety of chopped nuts
Some rice milk (or any other vegan milk)
Good quality vegan dark chocolate
Handful of oat chips

Put the bananas in a mixer, add a bit milk and mix. The idea is to get a nice ice-creamy texture so just add as much milk as needed. Then add the berries and mix some more, but not so much so there are still some chunks left.
When this is ready stir inside some oat chips, chop the chocolate into chunks and add them as well and sprinkle chopped nuts on top. Of course it's much more fun to share this cold treat together. Enjoy!
