Vegan Garlic-Coconut Soup

Sometimes garlic can be a problem, but the problem is not really for the people who enjoy the garlic, but for those who share the same space with them. But actually, after a while you stop worrying about it and you just consume huge amounts of garlic without paying attention to what people say, and when you got there, it's time to make garlic soup! And anyway, if you would like to get rid of the garlic smell, you can chew a few parsley leaves or some coffee beans, but then it's really not fun…

The garlic has many benefits. It reduces blood pressure, it reduces cholesterol, it helps the body fight all kinds of allergies, it levels the amount of sugar in the blood, it increases the absorption rate of iron in the body, it increases the libido, it's full with vitamin B6 and many many more. And by the way, it repels vampires.    

In this recipe I use a combination of pure coconut milk and rice-coconut milk from Provamel. The rice and coconut have a wonderful taste together which is a pity to give up on, and any way, it goes really nice with the taste of the garlic. If you don't want to use this rice-coconut milk, you can just use more pure coconut milk instead and add some plain rice milk.

The Ingredients :


Peeled garlic cloves from two nice big garlics
500 ml pure coconut milk
500 ml rice-coconut milk
Coconut oil
One glass of dry sherry wine (and one more for the chef)
3 cups of water
Chopped leek
Spoon and a half of whole grain flour
Some nutmeg
Sea salt
Pepper

Start by melting the coconut oil in a big pot and sauté the leek until it's becoming transparent. Add the garlic cloves and turn the heat down. Let everything cook nicely until the garlic turns golden brown, turn the heat back up and add the sherry wine. In the meantime toast the flour in a pan and after a few minutes add it to the leek and garlic and stir a bit. It doesn't look so sexy at the moment, but the result is amazing. Add the coconut milk and the rice milk and stir. After a few minutes add the water and let it boil. When the soup boils turn down the heat and season it. If by chance you have some old bread left, you can easily make some croutons in the oven using some olive oil, and then add them to the bowl of soup. Enjoy!

  1. When you say, "Peeled garlic cloves from two nice big garlics" do you mean all the cloves from two entire heads of garlic? That seems like a lot.
